Bread rasmalai is an easy twist to the traditional rasmalai recipe. Rasmalai has always been my absolute favorite. Those soft chenna balls swimming in sweet milk with saffron? Pure bliss. The smell of it cooking filled our home with warmth and nostalgia.

But then, life took me to the States, and suddenly finding the time to make chenna from scratch was a whole different ball game. That’s when a close friend hit me with a game-changing idea: swap out the chenna for bread. Yep, you heard me right – bread!

Honestly, I was skeptical at first. Messing with a classic like Rasmalai felt like breaking some unwritten rule. But desperate times call for desperate measures, right? So, I gave it a shot.

And you know what? It was great! I mean, it’s not exactly the same as the original – let’s not kid ourselves. But when you’re short on time and craving that comforting taste, it’s pretty darn close.

Every time I’ve made it for friends and family, they’ve loved it. Like, big smiles and empty plates kind of love. So, if you ever find yourself in a pinch but still want that taste of home, give Bread Rasmalai a try. Trust me, it’s worth it.

Ingredients

White bread, whole milk, sugar, saffron, nuts (almonds, pistachios), cardamom powder, rose water, unsweetened condensed milk

Recipe Instructions

1. Prepare the Bread:

  • Remove the crust from the bread slices and cut them into small pieces or shapes of your choice. I made them round using cookie cutter

2. Prepare the Milk Mixture:

  • In a large, wide pan, bring the whole milk to a boil.
  • Once it starts boiling, reduce the heat and let it simmer for about 15 minutes, stirring occasionally.
  • Add the sugar, saffron strands, chopped nuts, cardamom powder, rose water, and condensed milk to the milk mixture. Stir well to combine.

3. Assemble the Rasmalai:

  • Gently place the bread pieces into the milk mixture, ensuring they are fully submerged.
  • Let the bread soak in the flavored milk for at least 30 minutes, allowing it to absorb the delicious flavors.

4. Chill and Serve:

  • Once the bread has soaked up the milk mixture, transfer the Rasmalai to the refrigerator and let it chill for a few hours.
  • Before serving, garnish with additional chopped nuts or a sprinkle of saffron for an extra touch of elegance.
