Shewayi kheer or Sevayi kheer is a type of pudding made from vermicelli and milk along with aromatic spices and dry fruits. It requires minimum ingredients and can be whipped up in less than 15 minutes.

This is a beginner friendly recipe requiring basic cooking skills. Since it is beginner friendly, this was the first dessert recipe my mom taught me. Today, I am sharing my mom’s recipe to make this amazing dessert.

Ingredients

For frying vermicelli and nuts

Vermicelli (sevayi or shewai), ghee, mixed nuts (almonds, cashews, pistachios)

For making kheer:

Whole milk, cream, sugar, cardamom powder, saffron strands

Sevayi or Shewai Kheer

Recipe Instructions

Frying vermicelli and nuts:

  • In a medium saucepan, heat a tablespoon of ghee and add mixed nuts. Fry till golden brown and set it aside.
  • In the same pan, roast the vermicelli until golden brown with the remaining ghee. Keep stirring to ensure even browning.

Making kheer:

  • In a separate deep pan, bring the milk and cream to a boil over medium heat.
  • Once the milk starts boiling, reduce the heat and let it simmer for 5-7 minutes. Stir occasionally to prevent it from sticking to the bottom of the pan.
  • Add the simmering milk to the roasted vermicelli and continue to cook on low heat. Let it cook until the vermicelli becomes soft and the milk thickens, stirring occasionally.
  • Add the roasted nuts and mix well.
  • Stir in the sugar and cardamom powder, and continue to cook until the sugar dissolves completely.
  • Turn off the heat and let the kheer cool down slightly before serving.
  • Garnish with saffron strands for an extra touch of elegance.

Serving Suggestions

  • You can serve the kheer as a dessert after a spicy traditional meal to comfort and complete the meal.
  • You can enhance the flavor and nutritional value of your Sevayi Kheer by adding fruits like chopped mangoes, bananas, or apples. Just add them after the gas is switched off to prevent curdling or use them as a garnish before serving.
  • You can easily transform this Sevayi Kheer into Sheer Khurma! Simply add a splash of rose water for that authentic Sheer Khurma taste. Sauté some raisins in ghee until plump, then toss them into the kheer for added sweetness. Let it all simmer until it reaches your desired consistency. You can also fry other dry fruits like cashews and almonds and garnish to serve the fusion of Sevayi Kheer and Sheer Khurma flavors, perfect for celebrating Eid or any special occasion!

  • For a richer flavor, you can also add a few drops of rose water or kewra water.
