The Indian Masala Omelet is a quick and easy desi-style dish that packs a punch of flavor.

I am always amused by the fact that with just a few basic ingredients like onions, tomatoes, coriander leaves, green Thai chilies, and paired with sliced bread, Indian-style pav, or rotis, this omelet becomes a fulfilling meal that’s ready in minutes.

When my parents lived in Mumbai in the initial years after they were married, Omelet for breakfast used to be their weekend ritual. However, when health issues led them to stop eating eggs, the tradition came to an end. But my love for omelets persisted, especially during my college days, when I used to sit and chit chat with my friends over a cup of tea and bread omelet at our college canteen. Memories were made there which are still alive in our hearts.

In India, Anda Omelet(egg omelet) is not just a breakfast or any meal, it is an emotion. The people rushing for work in the morning on the bustling streets have egg omelet as their life savior as it keeps them full for a long time.

Not just that, it’s a favorite snack in many households and a must-have on long train journeys across India. Sprinkled with a touch of chaat masala and cooked on cast iron pans, it’s a piping hot treat served straight from the streets to your plate.

Here, I am sharing with you my favorite go-to desi masala egg omelet recipe.

Ingredients:

  • 3 eggs
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 green chili, finely chopped (adjust according to your spice preference)
  • 2 tablespoons chopped fresh coriander leaves
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon cumin powder
  • 1 teaspoon black pepper powder
  • 2 tablespoons milk
  • Salt to taste
  • 1 tablespoon oil or ghee for cooking

Instructions

Making the egg mixture

  1. Begin by cracking the eggs into a mixing bowl. Make sure there are no shell fragments. Using a whisk or fork, beat the eggs until they are well combined and slightly frothy.
  2. Next, it’s time to add the chopped milk, onion, tomato, green chili, and fresh coriander leaves to the beaten eggs. You can adjust the quantity of these ingredients according to your taste preferences. For a spicier omelet, add more green chili, or for a milder flavor, reduce the amount.
  3. Once the vegetables are added, sprinkle the turmeric powder, red chili powder, black pepper powder, cumin powder, and salt over the mixture. These spices will add depth and flavor to the omelet, giving it that characteristic masala taste.
  4. With all the ingredients in the bowl, gently mix everything together until they are evenly distributed throughout the egg mixture.

Making omelet:

  1. Now, it’s time to heat the oil or ghee in a non-stick skillet over medium heat. Allow the oil or ghee to heat up until it shimmers slightly, indicating that it’s hot enough for cooking.
  2. Once the skillet is hot, carefully pour the egg mixture into the skillet, ensuring that it spreads out evenly. Use a spatula to gently nudge the edges of the omelet, allowing any excess liquid to flow to the edges and cook.
  3. Let the omelet cook undisturbed for 2-3 minutes, or until the bottom is set and golden brown. This ensures that the omelet cooks evenly and develops a nice crust on the bottom.
  4. Using a spatula, carefully flip the omelet over to cook the other side. If the omelet breaks while flipping, don’t worry! Simply press it back together with the spatula and continue cooking.
  5. Cook the omelet on the other side for an additional 2-3 minutes, or until it is fully cooked through and no longer runny in the center. The edges should be slightly crispy, and the center should be firm to the touch.
