Egg Bhurji or Anda Bhurji are Indian scrambled eggs with onion, tomatoes and aromatic spices. It is a popular street food in India and is served along with buns or sandwich bread. It is a versatile dish which can be served as a breakfast as well as lunch or dinner.

This recipe calls for basic ingredients that are commonly found in your pantry and kitchen. It’s not only simple but can also be made up in less than 10 minutes.

I make this recipe whenever I am short on vegetables in my refrigerator and evidently short on ideas on what to make for breakfast or dinner. It is our family favorite and is always liked by my family members.

Ingredients

Eggs, oil, cumin seeds, green chilies, onion, tomato, turmeric powder, red chili powder, Salt, whipping cream, ghee, fresh coriander leaves

Recipe Instructions

Preparation:

  • Crack the eggs into a bowl and beat them lightly with a fork until well combined. Set aside.
  • Finely chop the onion, tomatoes, green chilies, and coriander leaves and keep them aside.

For making Anda Bhurji:

  • Heat oil in a non-stick pan over medium heat. Once the oil is hot, add cumin seeds and let them splutter for a few seconds.
  • Add the chopped onions and green chilies to the pan. Sauté them until the onions turn translucent and start to brown slightly, stirring occasionally. This should take about 3-4 minutes.
  • Sprinkle turmeric powder, red chili powder, and salt. Mix well to ensure that the spices are evenly distributed.
  • Now, add the chopped tomatoes to the pan and continue cooking until they soften and release their juices. Stir occasionally to prevent sticking, and cook for another 3-4 minutes.
  • Once the tomatoes are soft, pour the beaten eggs along with whipping cream into the pan. Allow them to sit for a few seconds until they start to set around the edges.
  • Using a spatula, gently scramble the eggs with the onion-tomato mixture, breaking up any large chunks. Continue cooking and stirring until the eggs are mostly cooked through but still slightly moist.
  • Cook the Egg Bhurji for another 2-3 minutes, stirring occasionally, until the eggs are fully cooked and no longer runny. Adjust the seasoning if necessary.

For garnishing:

  • Once done, turn off the heat and garnish the Egg Bhurji with freshly chopped coriander leaves for a burst of freshness and flavor.

Serving:

  • Transfer the hot and flavorful Egg Bhurji to a serving dish. Serve it immediately with toasted bread, roti, or pav for a hearty breakfast, brunch, or even a quick dinner.
