Butter corn is a simple preparation of sweet corn along with butter and some spices. It is super easy to make and takes less than 10 minutes to prepare. Enjoy it as a flavorful snack on its own or along with other snacks like Mathri, perfect for movie nights or gatherings with friends.

Ingredients
  

For cooking Sweet corn cob:

  • 4 sweet corn cobs peeled
  • 3 cups water
  • 1 teaspoon salt

For making butter corn

  • 1 cup sweet corn kernels
  • 1 tablespoon Butter
  • 1/2 teaspoon Salt as per taste
  • 1/2 teaspoon Pepper powder
  • 1/2 teaspoon red chili powder as per taste
  • 1 teaspoon Chaat masala
  • 1 teaspoon Lime juice
  • 1/2 teaspoon Black salt

Instructions
 

Cooking Sweet corn:

  • If using sweet corn cobs, in a saucepan add water and let it come to a rolling boil. Add salt and the corn cobs. Boil for 15-20 minutes and switch off the gas. Carefully remove the cobs from the water and let it cook. Then remove the kernels slowly.
  • If using frozen sweet corn kernels, thaw them on for 15 -20 minutes on the countertop.

For making butter corn:

  • Heat a skillet or frying pan over medium heat and add a generous dollop of butter.
  • Once the butter has melted, add the fresh sweet corn kernels to the pan.
  • Season the corn with salt, pepper, and a pinch of red chili powder for a spicy kick.
  • Stir the corn occasionally and let it cook until it's tender, usually around 5-7 minutes.
  • Once the corn is cooked to perfection, sprinkle it with chaat masala and a squeeze of fresh lime juice for a burst of tangy flavor.
  • Finish off by adding a touch of black salt to enhance the overall taste profile.
  • Give everything a final stir to ensure the flavors are well combined, then remove the pan from the heat.

    • If you prefer a smokier flavor, you can grill the corn kernels instead of sautéing them on the stovetop.

  • You can boil the sweet corn cob and remove kernels in advance and store them in the refrigerator for up to 2-3 days.
