Sweet Corn Chaat | Corn Chaat

Sweet Corn Chaat is a popular Indian snack crafted from tender sweet corn kernels tossed with a medley of onions, tomatoes, and aromatic spices.It is very easy to make, requires minimal ingredients and can be made in less that 10 minutes.

Ingredients
  

For cooking sweet corn cob:

  • 4 sweet corn cobs peeled
  • 3 cups water
  • 1 teaspoon salt

For cooking thawed sweet corn kernels:

  • 2 cups boiled sweet corn kernels
  • 1 tablespoon butter
  • a pinch of salt
  • 1 teaspoon black pepper powder

For making chaat:

  • 1 medium-sized onion finely chopped
  • 1 medium-sized tomato finely chopped
  • 1 green chili finely chopped (adjust according to your spice preference)
  • ¼ cup chopped coriander leaves
  • 1 tablespoon lemon/lime juice
  • 1 teaspoon black pepper powder
  • ½ teaspoon chaat masala
  • 1 teaspoon roasted cumin powder
  • 1/2 teaspoon black salt
  • Salt to taste

For Garnish:

  • 2 tablespoons chopped coriander leaves
  • Sev thin crispy noodles for garnish (optional)

Instructions
 

For cooking Sweet corn:

  • If using sweet corn cobs, in a saucepan add water and let it come to a rolling boil. Add salt and the corn cobs.
  • Boil for 15-20 minutes and switch off the gas. Carefully remove the cobs from the water and let it cook. Then remove the kernels slowly.
  • If using frozen sweet corn kernels, thaw them on for 15 -20 minutes on the countertop. Heat butter in a medium sauce pan. Add the sweet corn kernels and cook for about 2-3 minutes. Add a pinch of salt and black pepper powder while cooking.
  • Once they are cooked, take it out on a plate and let them cool

Making Chaat:

  • In a large mixing bowl, combine the boiled sweet corn kernels, chopped onion, tomato, green chili, and coriander leaves.
  • Add lemon juice, chaat masala, roasted cumin powder, and salt to taste.
  • Mix everything well until all the ingredients are evenly coated with the spices.
  • Taste and adjust the seasoning if needed.
  • Transfer the corn chaat to serving bowls or plates.

Garnish and Serve:

  • Garnish with chopped corinader leaves and sprinkle fine sev on top for an extra crunch (optional).
  • Serve immediately and enjoy.

Tips and Tricks
  • For extra freshness, you can add chopped cucumber or bell peppers to the corn chaat.
  • If you prefer a spicier flavor, you can add a dash of red chili powder or increase the quantity of green chilies.
  • To make cheese corn chaat, sprinkle some grated cheese on top before serving. I use Amul Cheese for that authentic flavor, however feel free to use any cheese of your choice.
  • If you are making for the kids, you can skip the green chilies and I am sure it will be a hit with your kids too.
  • Adjust the amount of lemon juice and chaat masala according to your taste preferences.
  • For a healthier option, you can use olive oil instead of butter for roasting the corn kernels.

  • You can boil the sweet corn kernels in advance and store them in the refrigerator for up to 2-3 days.
  • Chop the onion, tomato, and green chili ahead of time and store them separately in airtight containers in the fridge.
